I'm not sure which of the two places you mention is better. It's been a while since I stayed at the Hilton (I think it was the Adam Mark at the time) and I've never been to the Daytona Resort and Conference Center.
What I can say is that the Hilton is pretty much at the center of the strip and way closer to a lot of stuff not directly attached to the hotel. You could easily walk to a number of bars, restaurants and night clubs, including a number of cool beach bars. I'm not sure what all is near the Daytona Resort, but it's probably somewhat sleepier.
You might also want to check to see if the week you're coming happens to be the October Bike Week. Being there during Bike Week is fine though, and maybe even more fun.
